Next year’s supper

Next year’s supper is growing nicely so far. Our main garden crop this year is potatoes – Yukon Gold and Red Lasota. A total of 18 pounds of seed potatoes were cut, cured and planted resulting in around 100 plants.

We use the “52 jar” strategy in our pantry. This means we can up 52 jars of garden produce to have on hand until the next year’s harvest. Fifty-two jars of potatoes, 52 jars of green beans, etc. We chose the “52 jar” strategy because we anticipate eating at least one jar of each vegetable per week. As you know, there are 52 weeks in a year.

Once we have finished canning, any extra produce is shared to family and neighbors. Not to boast, but it’s a good feeling to share fresh, healthy food, and let others know that you are thinking about them.
